Hindale Restaurant Plans New Eatery Next Door

Hinsdale has become more family-driven and children-focused, a restaurant co-owner said.

HINSDALE, IL – The owners of downtown Hinsdale's Fuller House restaurant have an idea for an eatery next door, called Humble Patty.

Fuller House, which is northwest of First Street and Garfield Avenue, is proposing Humble Patty for around the corner at 50 S. Garfield Ave. It is the site of the former Dips & Dogs, which closed five years ago after about a decade. Before that, the property was a gas station.

Humble Patty plans to serve burgers, soft serve ice cream and other quickly prepared meals.

Fuller House is seeking the village's approval for changes to the outdoor dining plan for the new restaurant. On Tuesday, the Village Board is scheduled to take up the matter.

In a recent letter to Hinsdale officials, Fuller House co-owner Sam Vlahos said his restaurant has seen the village become increasingly family-driven and children-focused.

"Fuller House offers more of a sit-down dining experience, which is why we felt strongly about creating something completely different," Vlahos said. "Our goal is to create a spot where families can easily grab a quick meal, kids can stop by after school for a treat, and friends can gather in a relaxed, welcoming environment."

The owners plan to center the restaurant on the growing popularity of smash burgers. And Vlahos said the eatery will featire "dirty sodas," which are sodas mixed with flavored syrups, creams or fruit juices.

Humble Patty will operate completely separate from Fuller House, with its own staff, systems and operations, Vlahos said.
