(NEW ROCHELLE, N.Y. — Oct. 22, 2026) —Tomorrow’s culinary talent is serving dinner today at The Dining Lab. Monroe University’s acclaimed Culinary Institute of New York (CINY), one of the nation’s leading culinary programs, invites the public to enjoy contemporary American fine dining at its student-run restaurant in downtown New Rochelle.
Recognized for its award-winning culinary teams and hands-on approach to education, CINY prepares aspiring chefs and hospitality professionals for successful careers in restaurants, hotels and the broader hospitality industry. The institute combines rigorous instruction with practical experience, helping students build the creativity, technical expertise and service skills needed to excel in a competitive field.
At The Dining Lab, that preparation comes to life. Students from Monroe’s School of Hospitality Management and the Culinary Arts prepare and serve dinner while developing their skills in restaurant operations, food preparation and refined dining service. Every evening offers students an opportunity to put their training into practice—and guests a chance to experience emerging talent firsthand.
Since opening in 2013, The Dining Lab has earned recognition from The New York Times, The Wall Street Journal and Westchester Magazine. Its fall season welcomes diners for an evening that pairs contemporary American cuisine with a meaningful purpose: helping shape the future of the culinary and hospitality professions.

The Dining Lab is located at 434 Main Street, New Rochelle, NY 10801.Dinner is offered Tuesdays, Wednesdays and Thursdays, by reservation only, with seating times at 6:30 p.m., 6:45 p.m. and 7 p.m.
