Executive Chef at Eagle’s Trace Shares Super Bowl Recipe

New, bold, sweet, and zesty recipe for a Pepperoni Hot Honey Glaze

West Houston, Texas - Super Bowl gatherings are notorious for serving wings as snacks. The challenge is coming up with new sauce flavors and combinations that keep your party memorable and delicious.

Lyle Mathes, Executive Chef at Eagle’s Trace, the Erickson Senior Living community in West Houston, Texas, shares a recipe for a Pepperoni Hot Honey Glaze that tastes amazing for anyone who wants to try a new, bold, sweet, and zesty flavor.

Pepperoni Hot Honey Glaze
25 slices of premium pepperoni (the greasier the better)
1.5 cups of real honey
½ tsp ground cayenne pepper
½ tsp granulated garlic
2 tbl unsalted butter

Thinly slice the pepperoni slices and cook in a pan over medium heat until the grease starts to render out of the pepperoni and the pieces start to get crispy. Add the garlic and cayenne pepper and let cook for 30 seconds. Lower the heat, add the remaining ingredients, and stir until the butter melts and all ingredients are evenly blended. Remove the glaze from the heat. Avoid overcooking the glaze once it is done because the honey reduces quickly, and you might have to add more. Transfer the glaze to a mixing bowl.

Prepare your favorite breaded wing recipe, making sure the wings are very crispy.

Add them to the bowl of glaze and toss until evenly coated.

Serve immediately. Enjoy!
