Join Folkways Wines and North Salem Provisions for an evening of oysters, wine, and good company at Folkways Wilton. Kat of North Salem Provisions will lead a casual introduction to shucking your own oysters, with a little conversation along the way about sourcing, oyster farming, and the role oysters play in our local marine ecosystem. We’ll be shucking oysters from Copps Island throughout the evening, served with mignonettes from North Salem Provisions, alongside three wines selected by Folkways. Partnering with O2 Café and Root 2 Rise, the updated café menu features organic, locally sourced options for both breakfast and lunch. Offerings include wholesome chia seed puddings, overnight oats, cold-pressed juices, hearty soups, fresh salads, wraps, and a selection of baked goods—with ample options for vegan and gluten-free diets.
"We listened closely to our members' requests for expanded breakfast and lunch selections," explained Linda Murphy, owner of Plank Ridgefield and Plank Katonah. "I am delighted to introduce a curated lineup of my personal favorites from O2 Café and Root 2 Rise, including their soups, salads, wraps, pastries, and overnight oats. We want Plank to be an inviting space where members can connect over a meal after class or pick up nourishing food to go."

Since opening in the former Squash's space on Main Street in 2024, Plank Ridgefield has built a loyal following through its welcoming atmosphere and diverse classes. Murphy opened the first Plank studio in Katonah, N.Y., in 2023, creating spaces where people of all fitness levels can get stronger, recharge and connect.
"These past two years have been incredible, and it's our members who have made Plank what it is today," Murphy added.
