Annual pancake breakfast raised much-needed funds
The Scotch Plains Volunteer Rescue Squad Auxiliary held its 16th annual Pancake Breakfast on Sunday, February 22, 2026, from 8:00 a.m. to 12:00 p.m. As always, it was a great success. Auxiliary and squad members, along with local Girl Scout troops, served over 250 adults and a number of children under 5, and raised much-needed funds to support this crucial all-volunteer organization.
All-you-can-eat pancakes, toppings, sausages, coffee, tea, and juices were offered for just $8.00 per person. There was also a raffle for baskets and gift cards for sports and fitness, salons, restaurants, mini-golf and more. These items were generously donated by individuals, local businesses and organizations, some of which donated already-prepared themed baskets.
Attendees had a wonderful time, and everyone’s support is greatly appreciated. It really does take a village, and the Auxiliary would also like to give special thanks to Fabio’s Bistro for their fundraiser night, Lady Bug Pest Services and Construction for donating complimentary tickets to underserved families in our community, and the Fanwood Scotch Plains Rotary Club that made the raffle possible.
