A Maximalist Western Bar From The Jacob's Pickles Team To Open On The UWS

UPPER WEST SIDE, NY — Velvet Cowboy, a maximalist new bar and restaurant, is preparing to open on the Upper West Side this fall, its owners told Patch.

The new restaurant, from the team behind local favorites like Jacob's Pickles, Maison Pickles, and Tiki Chick, will open this Tuesday in the original Jacob's Pickles location at 505 Amsterdam Ave. between West 84th and 85th streets.

The new concept features a dining room designed to emulate the psychedelic optimism of the 1970s, with the cowboy spirit of the American Southwest, Jacob Hadjigeorgis, the owner, said.

"Velvet Cowboy is an electrifying mindset," Hadjigeorgis said. "It’s inspired by the freedom and adventure of the American Southwest—staying out late, meeting new people, listening to great music and seeing where the night takes you. At its heart, it’s about self-expression, human connection and enjoying the moment."

The menu, created by Chef Steven Yen, features western bites like smash burgers, Frito pies, chili cheese fries, and funnel cake. All food on the menu is priced at $5.

The cocktail program, led by Michael Walters, includes offbeat ingredients like honeysuckle, sarsaparilla and crème fraîche, and techniques including fermentation and fat washing give the drinks a more elaborate touch.

Though Velvet Cowboy is taking over the Jacob's Pickles flagship, fear not: the Upper West Side's other Jacob's Pickles has no plans to close its other location, which is 680 Columbus Ave.
