Juniper Communities Hosts Hands-On Butchery Masterclass for Culinary Leaders

Mount Joy, PA – A regional cohort of Dining Directors from across Juniper Communities, including Kaitlin Santmyer and Adam Weillan from Juniper Village at Mount Joy, recently gathered for an intensive, hands-on butchery masterclass led by experts from Foods Galore, Inc. The session provided culinary leaders with practical training they can apply directly in Juniper kitchens, enhancing both the quality and efficiency of meat preparation for residents.

The training focused on precision butchery, yield optimization, and knife safety, combining technical skill development with cost-effective purchasing strategies. Attendees practiced advanced beef and pork breakdown techniques while learning strategies to optimize yield and reduce waste. The session highlighted that lower-priced, untrimmed cuts often result in higher overall costs, whereas higher-quality, trimmed cuts provide better yield, easier handling, and superior results in the kitchen.

Participants also received instruction on beef grading and identification, including Select, Choice, and Prime grades, and learned which cuts are best suited for different cooking methods. Knife safety was emphasized throughout, with chefs practicing controlled cutting techniques, moving the meat instead of the knife, and using cut-resistant gloves to prevent injuries.

The masterclass showcased versatile, high-value cuts, demonstrating how they can be used across multiple menu cycles, carving stations, and large-scale events while minimizing waste. Attendees also learned practical tenderizing techniques, including using handheld Jaccard-style tools and handling slightly firmer meat for improved safety and consistency.
