Flore Café In Tysons To Launch Provence-Inspired High Tea Menu
Flore Café in Tysons will launch a Provence-inspired high tea menu June 6 inside Sisters Thai.

TYSONS, VA — Flore Café, located inside Sisters Thai at Capital One Center in Tysons, will launch a seasonal high tea menu inspired by southern France on June 6.
The “Summer in Provence” menu follows the café’s spring cherry blossom theme and is intended to evoke the lavender harvests of Gordes and Valensole, according to the café. The seasonal setting uses indigo, purple, yellow and silver-sage colors, along with citrus and floral scents.
“With ‘Summer in Provence,’ we wanted to transport our guests straight to the rolling purple hills of Southern France,” founder Tammy Ditsayawathana said. “By bringing together culinary elements inspired by the French countryside alongside premium tea curators like Mariage Frères, we have curated an afternoon that captures the slow, elegant, and aromatic spirit of a French country summer right here in Northern Virginia.”

The 14-course high tea menu includes savory items such as lavender-infused vichyssoise, Olivier lobster salad, ratatouille and goat cheese tartlets, fig and goat cheese salad, Herbes de Provence onion puff tubes and Salade Niçoise sandwiches.
Scones include apricot-walnut and lemon-blueberry, served with seasonal jam. Desserts include Mariage Frères Opera Blue tea crème brûlée, lavender-hued madeleines, extra virgin olive oil and orange mousse cake, hazelnut chocolate mousse in flower cups, raspberry lemon tartlets and vanilla bean éclairs.

The tea service features selections from Mariage Frères, the Paris-based tea house founded in 1854. Guests will be able to use a black-and-gold scent box to smell loose-leaf teas before choosing their pots. The tea offerings include Opéra Blue, Vert Provence and Earl Grey Provence.
The café will also offer a seasonal drink, the Provence 75, as a $15 add-on. The drink includes botanical French gin, lavender syrup, fresh lemon and sparkling wine, topped with dried lavender.
The “Summer in Provence” high tea will be available weekends from 11 a.m. to 4 p.m. Reservations are required through Resy. The cost is $89 per person and includes the 14 courses and tea pairing.
Flore Café is located inside Sisters Thai at 7735 Capital One Tower Road in Tysons. The café is part of Sisters Thai’s 8,300-square-foot flagship location at Capital One Center and offers European-style high tea with Thai-influenced flavors. Pastry chef Oksana Chepoy, who has more than 25 years of experience, creates desserts for the café, according to the business.
