Restaurants At Greenspring Focus on Collaboration and Socialization

At Greenspring, an Erickson Senior Living community in Springfield, Va., residents savor delicious dishes prepared by professional chefs.
"We are fortunate to have several dining venues, each offering a wide selection of entrees," says resident Suzette Kern. "I love to cook and still do so regularly, but it's wonderful to have the option of enjoying a meal in one of the restaurants."
More importantly, each meal provides the opportunity for social connection. Whether gathering with neighbors for dinner, celebrating an occasion with friends, or inviting loved ones to share a meal, dining is a highlight of life at Greenspring.

Variety for every taste
Each of Greenspring's eight on-site restaurants features its own distinct menu and atmosphere.

The recently renovated Fireside Restaurant offers a formal dinner experience and a popular Sunday brunch. Woodland Skies provides another elegant dinner option, serving refined entrees such as blackened scallops and New York strip steak.
Offering Sunday brunch and a fast-casual dining experience for lunch and dinner, the Potomac Café serves a variety of sandwiches, salads, and fresh options from its grill, deli, and pizza stations. Inside the cafe, Brew Bar serves specialty coffees along with healthy breakfast and lunch options, such as build-your-own grain bowls and plant-based selections.
The Cork and Fork boasts an exhibition-style kitchen where residents can watch chefs prepare their meals. Open for dinner, the restaurant offers a variety of international and plant-based dishes alongside classic favorites.
The newly renovated Jefferson restaurant offers dinner service and a popular Sunday brunch, featuring weekly specials and a welcoming atmosphere for residents and their guests.
New to the dining scene is the Village Eatery, which has quickly become a favorite for casual breakfasts and lunches. Similar in style to the Potomac Café, the restaurant offers sandwiches and a pizza station.
The newest restaurant on campus, Seasons, offers Greenspring's formal lunch experience. The full-service restaurant features a wide range of entree choices. Just outside Seasons, the Tavern provides a relaxed gathering place for residents to enjoy a cold pint or signature cocktail with friends.
Resident-inspired meals
With so many restaurants to choose from, Dining Director Cory Young and his team of professional chefs prepare more than 1,500 entrees every night. Meals are cooked to order, ensuring dishes are always fresh and flavorful.
"We take great pride in serving delicious meals that residents truly enjoy," says Young. "Our chefs use only the freshest produce. We want residents to feel confident that every meal is prepared with care."
Young notes that his team's strong partnership with the resident dining committee ensures that restaurant menus reflect residents' preferences.
"We take their input seriously and incorporate that into what we do every day," he says. "Our main goal is to offer something for everyone. Whether residents prefer plant-based meals, pescatarian options, comfort food, or international cuisine, we want them to find dishes they will enjoy."

Residents are also encouraged to share feedback about their dining experiences through online surveys, printed comment cards, and, of course, speaking directly to the chefs.
Gathering around
Throughout the year, Dining also hosts special events, such as themed meals and holiday celebrations, bringing residents together for memorable meals.
In the past, residents have enjoyed festive fare for New Year's Eve, Valentine's Day, Easter, Cinco de Mayo, and St. Patrick's Day--just to name a handful.
"The Valentine's Day meals are always very popular, with special touches such as white tablecloths and red roses on each table," Suzette says. "The elevated menu, featuring items like lobster tails, is especially appreciated by residents."
Whether she's celebrating a holiday or simply catching up with a neighbor, Suzette finds that socializing is the best part of her dining experiences at Greenspring.
"[Socializing] is probably the single most important aspect of dining at Greenspring," she says. "The friendly atmosphere created by the Dining staff provides opportunities for social connections among the residents. Social connections, especially those formed around shared meals, are extremely important."
