Inspectors Flag Plumbing, Handwashing And Sanitation Issues In Fredericksburg
Five Fredericksburg food facilities were cited July 16-20 for plumbing, handwashing, temperature and sanitation violations.
FREDERICKSBURG, VA — Five Fredericksburg-area food establishments were cited for health code violations during inspections conducted from July 16 through July 20, according to public reports from the Rappahannock Area Health District.
The findings included missing paper towels at handwashing sinks, improperly held cheese, inadequate plumbing protection and surfaces that needed cleaning. Inspectors also found wet dishes stacked before they had dried at two restaurants.

Inspection reports reflect conditions observed during each visit. Some violations were corrected immediately, including providing paper towels and discarding food held above the required temperature.
Handwashing And Temperature Violations

Inspectors found no paper towels at a handwashing sink in the preparation area. Staff supplied towels during the inspection. Two containers of feta cheese in an overstocked cooler registered 45 and 46 degrees, above the maximum cold-holding temperature of 41 degrees. The containers had been in the cooler since the previous day and were voluntarily discarded. Inspectors also found metal sheet pans and containers stacked while wet, along with soiled shelving, fryer interiors and the inside of a drive-through preparation cooler. Additional comments noted two flying insects, areas needing new caulk and an overstocked preparation cooler near the drive-through.

Inspection date: July 16
Two handwashing sinks did not have paper towels, according to the report. Towels were supplied during the inspection. Additional comments noted a hair-restraint issue and a box of frozen bread stored on the walk-in freezer floor; both were corrected during the visit. The inspector also noted one flying insect and cracked floor tiles. A two-door cooler was not being used and contained no food requiring temperature control.
Cleaning And Dish-Drying Findings

Inspection date: July 17
Inspectors found stainless steel containers stacked while still wet in the dishwashing area. Cleaned and sanitized equipment must be allowed to air-dry or drain adequately before being stacked. Cooler gaskets and the interiors of cabinets beneath the soda machine also needed cleaning. Additional comments noted a chipped container lid, a gap in a hood filter and a floor area in the back of the restaurant that needed cleaning.
Spotsylvania Regional Medical Center
4600 Spotsylvania Parkway, Fredericksburg, VA 22408
Inspection date: July 17
The inner and outer surfaces of deep-fryer cabinets were soiled, inspectors reported. Walls throughout the kitchen also needed cleaning. The report directed the facility to clean equipment and physical facilities often enough to prevent soil from accumulating.

Inspection date: July 20
Inspectors found that the grease trap at the three-compartment sink was directly connected to the plumbing without a required air gap. An air gap helps prevent wastewater from backing up into equipment. The inspector gave the person in charge an informational handout and requested photographs after an air gap is installed. Additional comments said floors throughout the facility were very sticky and needed cleaning.
